Well you could follow NCN Route 1 from Dover (direction: london) but cross the Thames on the Gravesend ferry and head N from there towards Cambridge.

I think Dover to Oxford and back to Cambridge and then back to Dover might be a bit far depending on how old your family is. You might be best to explore a smaller area in detail? Why not cross to Portsmouth area and explore the New Forest, Hampshire and Dorset.

Plan your route using this, which will give traffic free routes - cycle.travel

It will inform you of distances, times .pdfs of maps and .gpx if you use a sat nav.

Bon courage

for Cambridge - Oxford you could use this route.

From london, there are trains to dover. Bikes don't need a ticket but you have to travel outside rush hour.

How does that compare to the more obvious (to me anyway) Cambridge-Bourn-Caxton-Everton-National Byway-Blunham-NCR51 Bedford-MK-H8-NCR51-Bicester-Oxford? Probably faster because it's more on road and avoids going though larger places? Maybe not the best tour if you'd like to see the towns and cities in between and prefer cycle tracks where possible?
