I've done many circular day rides elsewhere in Holland but never from Amsterdam. I would recommend this site though, it has an interactive map and a ride planner(it's also in English if you click your mouse on the Union Jack symbol in the top right corner of the webpage);

Difficult to advise without knowing your interests, what you might like to see, distance you would feel comfortable cycling in one day.

Can't fully remember exactly what we did and what routes we took, but we went up to Alkamaar on one day trip, http://www.holland.com/global/tourism/a ... lkmaar.htm
And headed southwards toward the first of the bulb fields that was in cycle-able distance from Amsterdam. Possibly the Keukenhof Gardens. Depends on time of year you are going, we went last weekend in March and it was just a tiny bit early for the bulb fields to be at their best but there was still stuff to see.
And it was before the Cheese Markets started for the season but nevertheless gave us a destination to head to with lots of pretty villages en route.
Apologies as well, I cannot remember exactly where we stayed (it was arranged by someone else as a surprise) but we were about 20mins out of central Amsterdam by train, in a hotel right near a train station and bike shop that had bike parking / storage (which we used for the duration of our stay). The trains were frequent, efficient and ran all night (we could not hear them from hotel) so were an excellent way of popping into the centre for the sights on the days / evenings we did not cycle.

I've done a loop out towards Ijmuiden and then follwed the coast to Scheveningen. The bit from Katwijk is nice as it runs through the dunes and actually goes up and down a bit with a lovely water tower just as you enter Scheveningen. This link isn't me but shows some parts

From there onto the Hague the centre of which is worth a look. I then rode back via Leidschendam, Voorshoten and Leiden (also nice to look around). I just had a map picked the next place I wanted and followed the bike path signs. Wind direction is vital if it's a howling NE do it anti-clockwise.
This has directions to get from The Hague to Ijmuiden at the bottom of the page.
