We hope to be touring the parc regionale de Morvan in France next year but would like to know something about the terrain first.
Is there a point of reference / website where such information can be found?

Google maps show relief. Shading and contours. Not the best as things like roads are not shown, but useful for getting a general idea.
Go to the menu bit and click on terrain.

Try the Cycle.travel website. There are contour lines (a bit faint) and you can quickly try routes and look at their profiles. Easy to get into.

Also, if you plot a route on cycle.travel or use the cycle option on Google Maps, you get a rough profile and total height gained/lost for any given route.
PS. The Morvan is a fantastic place but I would describe it as moderately hilly!
