Hi ,
We're planning to ride the above in May 2015. We've heard the Santander to Bayonne bit is a bit hairy ( tunnels, fast roads etc ) any help would be appreciated.

Also, if you do a search on the forum for 'Santander', you will find a few other threads with some information. As the ferry to Santander takes bikes, it is a common tour starting point.

Re: Santander to St Malo
As Vorpal has stated the two previous threads referred to contain all the information you may need. I have given details of a route out of San Sebastian avoiding tunnels. Here it is: viewtopic.php?f=16&t=73560#p641473
There is your way. There is my way. But there is no "the way".

Unlike the Portsmouth/Bilbao ferry sadly.

We let the train take the strain to the border, it is an interesting trip but practically, you have to break the journey at Bilbao where hotels are not cheap. It should be possible to stop before Bilbao and camp but this would need some research.
As for routes through France, I think the options are a direct route across country or up the West coast on a well-beaten path towards Roscoff then along the north coast.
This maybe of some help - but not for cycling in Spain! https://www.crazyguyonabike.com/doc/?o= ... 12400&v=PB
